Zucchini Appetizers
3 cups thinly sliced zucchini
1 cup baking mix
1/2 cup finely chopped onion
1/2 cup grated Parmesan cheese
1/2 cup oil
4 eggs , slightly beaten
2 tablespoons chopped parsley
1/2 teaspoon basil
Garlic powder
1/2 teaspoon salt
Combine zucchini , baking mix , onion , Parmesan cheese , oil , eggs , parsley basil , garlic powder and salt in a bowl; mix well. Spread in greased 9x13-inch baking dish. Bake at 350 degrees for 25 minutes or until golden brown. Cut into 1x2-inch pieces. Cool for 15 minutes. Serve warm. Yield: 54 servings.
